A boneless hen breast is like a duck steak. It is the cut favored by restaurants because each side weighs about 8 oz and makes a nice portion. There are two double-breasts per package (i.e. 4 sides); each package weighs about two pounds and will serve 4. They are vacuum-packed and will keeps 10 days refrigerated. 2 per pkg. Net Weight: 1.65 lbs.

2Average Quality Very High Price  May 22, 2008
The duck arrived very fast and in good condition. The breast flavor was decent and it was fairly tender cooked to MR. It was good, but for $[...] per OZ. or $[...] per lbs. I had much higher expectations and would order the duck again only if it were marketed at about $[...] per lbs. The over all impression was good, but nothing exceptional except for the price. No bang for your buck here. I will try to find a better value.

Arrived within two days. I ordered 3 packages. I studied cooking at California Culinary Academy in San Francisco, and used to have access to the one big poultry supply houses in that city. I was always using this kind of duck breast in many of my recipes. Alas, I live in Tucson now and don't have as easy an access this item.

These duck breast were as great a quality of those I used to purchase directly from the suppliers in San Francisco. This company is my new source for game and I will be using them exclusively from now on.

This Muscovy Duck breast is a delicacy of the first rate. The boneless breast is great with many recipes, marinaded, grilled, etc. Excellent service from the merchant, will order from them again.
